Cupcakes VS Muffin

Apakah perbezaan di antara cupcakes dan muffin? Aku percaya masih ada yang tidak dapat membezakan kedua-duanya.. Untuk entry kali ni aku copy 1 info yang berguna untuk para pengunjung untuk mengetahui sedikit sebanyak berkenaan cupcakes dan muffin.

Perbezaan paling mudah ialah kek cawan mempunyai frosting atau ising di atasnya. Manakala mufin tidak dihiasi dengan frosting atau ising.Walau bagaimana pun, kebelakangan ini sudah ada mufin yang dihias dengan frosting mengikut kehendak pelanggan.

Selain itu, kandungan bahan membuat mufin dan kek cawan juga berbeza. Bahan asas  membuat mufin terdiri daripada 2 cawan tepung, 2-4 camca besar gula, 2 ½  camca teh serbuk penaik, ½ camca teh garam, 1 biji telur, ¼ cawan minyak, lelemak atau mentega, dan 1 cawan susu. Apabila nisbah lemak, gula dan telur dua kali ganda daripada bahan asas membuat mufin, maka yang terhasil ialah kek cawan.

Mufin ala Amerika berbeza dengan mufin ala Inggeris. Perbezaannya adalah dari segi bahan yang digunakan sewaktu menyediakan juadah itu. Mufin ala Amerika lebih banyak menggunakan soda penaik dan serbuk penaik. Manakala mufin ala Inggeris berbentuk doh yang dinaikkan menggunakan yis. 

Mufin ala Amerika boleh dikatakan kacukan antara roti dengan kek. Sementelah, mufin ala Amerika boleh dibahagikan kepada dua jenis iaitu, mufin kek dan mufin roti. Setiap jenis mufin mempunyai teknik adunan yang berbeza. Bagi membuat mufin roti, kandungan gula dan mentega harus dikurangkan. Manakala mufin kek pula menggunakan kandungan gula dan mentega yang banyak. 

Adunan mufin  yang paling asas menggunakan bahan-bahan seperti tepung, gula, serbuk penaik atau sida penaik, telur, lelemak (cecair atau pepejal) dan susu (susu mentega, yogurt, krim masam). Boleh juga ditambah bahan-bahan lain seperti kepingan buah-buahan, kekacang, coklat, esen vanila, rempah, cornmeal, bran dan oat. Jika mahukan mufin yang lebih menyelerakan dan nampak menarik, serbuk rempah, tepung atau gula halus boleh ditabur di atas mufin. Krim juga boleh disapu ke atas mufin.

According to our dictionary, a cupcake is defined as "a small cake, the size of an individual portion, baked in a cup-shaped mold," whereas the muffin is defined as "a small, cup-shaped quick bread, often sweetened." Strangely, the definitions don't touch on the subject of frosting, which to many seems to be a defining characteristic of a cupcake. However, they do touch on the subject of sweetness, citing that muffins are "often" sweetened, thus leaving it open to interpretation that they are often but not always sweet, and it does touch on their texture by defining them as a quick bread, which is often more dense than cake (think of the difference between say, a dense banana bread and the oft-lighter Hummingbird cake).
 
Now, we realize that there are all sorts of recipes out there, so we're not saying this is going to be true in every case, but with our two recipes, the major differences were as follows:
  • Oven temperature and baking time: the cupcakes were baked at 350 for 30 minutes, and the muffins were baked at 375 for 25 minutes.
  • Mixing: With the muffins, our recipe said to mix until the dry ingredients were mixed with the wet, but not until smooth; with the cupcakes, we creamed the butter and mixed longer, until there were no lumps.
  • Flour: There was significantly more flour in the muffin recipe.
  • Sugar: No difference! Both recipes called for the same exact amount of sugar for a batch of 20.
